In a huge mixing bowl add all the flours * and any herbal / spice seasonings.

Add warmed water, and proofed yeast, folding the mixture with a spoon before hand-kneading. Add minimal water.

Oil the dough ball after kneading, oil the same bowl, cover with towel over plastic, and set dough to rise in a quiet warm spot. Clean-up.

After 2 hours, it will rise to look as to the left, or above. Be very-glad!

Knead dough onto sprinkled flour until semi-firm yet resilient. Fold dough over and over for 5-7 minutes, adding minimal flour.

Its sure cool to be making a mess!

COOL DOUGHPORTIONING TO LOAVE-SIZES

Slice dough into beer bottle-sized portions. Knead each only enough to form a smooth loaf.

Use oiled bread pans. Cover the loaves, and await their rise. They rise more in the oven.

Preheat an oven to 400 deg. F. Place loaf pan inside. Wait 45 minutes, while the aroma fills your home. Then take one pan out, gently remove loaf and rap the bottom. If its a hollow sound, remove all loaves from pans, and return to oven another 3-minutes to brown all-over. Then remove loaves and let cool a short while.

* A mix of flours might include: rye, whole wheat, soy, rice, bread, all-purpose,….

Add honey and/or molasses. Life is short!
